margin-bottom: 0pt; margin-left: 0in; text-indent: 0in;\"\u003e\u003cbr\u003e\u003c\/p\u003e\n\u003cp style=\"language: ja; margin-top: 0pt; margin-bottom: 0pt; margin-left: 0in; text-indent: 0in;\"\u003eシャンパーニュの時代は4つ世代に分かれていると思っています。\u003cbr\u003e3つの生産地で大手メゾン（NM）が活躍する時代から、自分たちで育てたブドウでシャンパーニュを造る生産者（RM）が活躍する時代が到来し、ジャック・セロスやエグリ・ウーリエなどが活躍。\u003cbr\u003eまた、シャンパーニュの生産地も増え、時代はRM第2世代に投入し栽培（有機栽培（ビオ、ビオディナミ））、醸造が進化し、第1世代のもとで修業した生産者や親の後を継いだ生産者もチラホラ。第3世代になると多くの第1世代のもとで修業した生産者、親の後を継いだ生産者や新たに始めた生産者も増え更に多様性が広がりました。未開拓地であった南の産地やマイナー産地を切り開き”聖地”へと変えた生産者、古代品種のポテンシャルに目を付ける生産者なども増え、ビオからビオディナミ、ナチュラルな造りの生産者も増えより複雑に面白くなっていくと共に、年々価格も上昇。\u003cbr\u003e現在では、よりブルゴーニュ的な考えを持ち、自分たちで畑を所有しつつも、良い村の、良い畑のブドウを購入してシャンパーニュを造るNM業態の生産者も増えてきました（RMからNMに切り替える生産者も）。\u003c\/p\u003e\n\u003cp style=\"language: ja; margin-top: 0pt; margin-bottom: 0pt; margin-left: 0in; text-indent: 0in;\"\u003e\u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003e老舗のうなぎ屋しかなかったが、個人で始める人も増え、セントラルキッチンやフランチャイズ化も進んできたが柔軟にいいところ取りをするお店が増えてきた的な？？なんだかわかりやすそうで、わかりずらいな！\u003cbr\u003e例えば、\u003cbr\u003e大手NM　➔　RM　➔　小規模NM増える\u003cbr\u003eステンレス　➔　樽を使う生産者も増える\u003cbr\u003eドサージュ多い（6～8）　➔　ドサージュ少なく（0～3）\u003cbr\u003eガス圧（約5〜6気圧）　➔　ガス圧（約4気圧と低くする生産者も）　\u003cbr\u003e色々な産地をブレンド　➔　単一区画（リュー・ディ）増える\u003cbr\u003eシャンパーニュ3品種使用　➔　単1品種増える\u003cbr\u003eNV（リザーヴ ワイン）　➔　ヴィンテージ シャンパーニュやマルチ ヴィンテージも増える\u003c\/p\u003e\n\u003cp\u003e中でも近年で大きく変わったと思うのはやはり\u003cbr\u003e・よりブルゴーニュ的に\u003cbr\u003e・ドサージュ量少なく\u003c\/p\u003e\n\u003cp\u003eブルゴーニュのように村、畑、区画の詳細がまだあまりありませんが、シャンパーニュの未来はブルゴーニュのようになっていくと思います。そして個人的に注目しているのはやはり”コトー・シャンプノワ”！！\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003e現在のRMの魅力は、とても高い品質を作る生産者が増えており、彼らの個性、多様性だと思います。\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003eさて、今回はアドヴィスの布施氏にお越し頂き、現地でのお話なども踏まえ新時代の、これからのRMの多様性についてご説明頂きながら今回のために厳選したお取り扱いのシャンパーニュを試飲しながら楽しむ会となります。\u003cbr\u003e\u003c\/p\u003e\n\u003cp style=\"language: ja;
